Respect for the vines is one of our priorities. Production is maintained at 35hl/ha. -VINIFICATION The harvest is mechanical. The grape varieties are vinified separately. As soon as it reaches the cellar, the harvest is destemmed and undergoes traditional vinification for twenty days during which these punching downs and pumping overs promote the extraction of the aromas that characterize our terroir. - EAGEING AND PACKAGING It's only after the first winter that we determine the vats that will make up the blend, which will spend the next 12 months in oak barrels. It will then be placed in a vat to find its balance until the following autumn. The structure of this wine offers the possibility of conservation of 3 to 5 years.
