HAS.O.P Côtes du Roussillon Villages Les Aspres Imo Pectore 2021 50% Mourvèdre, 25% Syrah & 25% Carignan Clay-limestone soils in the Aspres terroir.  Beautiful cuts of beef will do just fine, as well as sweet and sour, oriental cuisine, tagines, etc. Ideal tasting now and up to 8 years.                                        Serve between 16° and 18° Cultivation mode Vineyard in conversion to organic farming since 2018.                                        This agriculture preserves the environment and biodiversity, weeding is manual or mechanical, protection of the vines is done through the use of natural substances such as sulfur or Bordeaux mixture, fertilization by compost or green manure.                                        At the cellar level, limitation of the use of sulphites and ban on inputs of animal or chemical origin.  Winemaking For Imo Pectore, we carry out green harvests, to control yields and maturity.  Grapes picked at phenolic ripeness, traditional vinification from destemmed grapes, long vatting.  Aging for 12 months in oak barrels for Mourvèdre, in stainless steel barrels for Carignan and Syrah Tasting Ruby color, tiled reflections On the nose, small cooked red fruits, with a hint of undergrowth Mouth with a hint of kirsch, notes of cocoa followed by thyme, with very silky tannins.
