After cooking, the molasses is crushed with a coconut and crystallizes naturally. OUR SECTOR The partnership between Écoidées and the producers' organization brings together nearly 1,000 harvesters. The coconut blossom sugar industry is located on the island of Java in Indonesia near Yogyakarta. The fair trade certification guarantees a contractual purchase price higher than the price of conventional sugar. A team of harvesters, affectionately nicknamed the Green Warriors, employed by the exporting company and long-time experts in the manufacture of coconut sugar, are tasked with working with producers to pass on their know-how, monitor the quality of production, be responsible for the social aspect (care, improving the quality of life, family issues) and raise awareness among harvesters about safety issues.
