This sap is heated and then crystallized to obtain an unrefined sugar. Unlike classic white sugar, this sugar preserves many natural nutrients essential to our body, such as iron, zinc and potassium. It is also rich in antioxidants that protect our cells. Organic coconut blossom sugar is also distinguished by its low glycemic index, between 24.5 and 35.
