Pepus clams are washed and steamed in a controlled process. They are carefully shucked and sorted by size. After a final wash, they are packed and the covering liquid (water and salt) is added. This clam is highly appreciated commercially for the quality of its meat and its great flavor. The texture is fine and elastic and the flavor is mild, very characteristic of the clam.
