This clam (Venerupis pullastra) is collected only in season (October to February) and is the highest quality of all those caught in the Galician estuaries. When they arrive at the facilities, they are placed in seawater so that they remove the sand or any other impurity by themselves. After cooking, they are washed and placed in their cans, where the covering broth (water and salt) is added. Our White Clams do not need anything else because their exquisite flavor and smooth texture make them unique.
