Corbieres STOPPER: cork stopper ⛰ GEOLOGY Dark laminated marls and limestones of the Lias. 🍇 GRAPES Carignan and Syrah. 💪 DEVELOPMENT Carbonic maceration is practiced on the carignan while the syrah undergoes a more classic vinification with destemming. The vatting lasts three weeks. After blending, the alcoholic fermentation ends in French oak barrels. Aging in barrels lasts twelve months. 🌡SERVING TEMPERATURE Between 15°C and 18°C. 🍷 TASTING EYE: dark garnet color with vermillion edges. NOSE: notes of dried fig, black olive, white pepper. Then, aromas of cherry, currant syrup, chocolate and a hint of nutmeg. MOUTH: sweet spices and mineral flavors, evolved aromas of truffles and coffee with notes of red fruits dominating a long finish. 🍽 FOOD & WINE PAIRINGS Cassoulet, shoulder of lamb with thyme.
