The large predatory snapper is considered by all fishermen, including sports fishermen, one of the most delicious fish in the Mediterranean. Sweet and juicy white meat, firm pulp, low fat and therefore very light and digestible. Completely deboned and steamed, it is cut into fillets and covered in quality olive oil. Precious and exquisite. Together with a salad it becomes a dish in itself.
