On their family farm in Florina (Eastern Macedonia), the Naoumidis family cultivates and preserves an ancient local variety of organic red peppers, the "Florinis", highly sought after in Greek cuisine for their fragrance, flavor, and tenderness... The vegetables are peeled by hand to preserve their aromas and the pepper strips are slowly roasted over a wood fire. A 260g jar contains approximately 1kg of fresh peppers, cooked for at least 3 hours to obtain a pepper concentrate. These pepper fillets can be eaten hot or cold with any preparation.
