
Black olive from Thassos Island A.O.P. is a small olive with a unique taste, neither bitter nor salty. They ripen as long as possible on the olive tree (so much so that they are the only olives that can be eaten straight from the tree). They are then collected by hand and left to dry with very little salt (1.78%). Neither pasteurization nor any other chemical treatment is imposed on the olives, so that they retain all of their flavor. Vacuum-packed, they are not subject to oxidation and can be kept for more than a year. Prepared only with water and salt, with a natural fermentation of 10 months. Their taste is complex and sweet, melting, and close to candied prunes! No pasteurization, no additives, no colorings.Store in a cool, dry place. Refrigerate after opening. 2.5 kg vacuum-sealed bag.
