Local producers organize themselves through washing stations that fulfil the function of a cooperative, ensuring consistency in the processing of their lots and favourable selling conditions. Farmers in this area are well known for picking coffee cherries only when they are at their optimum point of ripeness. Once in the washing station, the fruits are first classified, then pulped and then the beans are left to ferment for between 12 and 16 hours. Finally, they are washed with fresh spring water and left to dry on raised beds until the optimum bean moisture level is achieved.
