Our olive trees are located in the northern area of Cáceres in the Natura 2000 Network, which is an area of special environmental protection. Specifically, these are the regions of Sierra de Gata, Las Hurdes and the Alagón Valley; a unique and extraordinary place for the cultivation of the Manzanilla Cacereña variety. Cold-pressed production of first extraction The key to obtaining a first-class extra virgin olive oil is to carry out the process as quickly as possible so that the organoleptic properties of the olives are not lost. For this reason, we manually milk the olives to prevent them from falling to the ground and then we immediately take them to extract the oil, always cold. Packaging in branches We use the packaging system in branches, in which we avoid filtering it to keep all the properties and organoleptic characteristics of our oil intact. In this way we achieve a unique, dense and opaque texture. The oil in this state is purer and has a much more intense flavor that blends with a spicy touch.
