El Lagar del Soto Premium DOP Gata-Hurdes is a line of superior category extra virgin olive oil made from olives from olive trees registered in DOP Gata-Hurdes (protected designation of origin), integrated into "Red Natura 2000" spaces with special environmental protection.  The Gata-Hurdes PDO is located in the privileged environment of the north of the province of Cáceres, in the regions of Sierra de Gata, Las Hurdes, Trasierra-Tierras de Granadilla, Jerte Valley, Ambroz Valley, part of the Alagón Valley and La Vera (Extremadura). Its mild climate, abundant rainfall, and rich and diverse vegetation fill the olives used to make this Premium with rich and diverse flavors.  Coming from traditional, dry land cultivation, they are made from Manzanilla Cacereña olives. The fruits selected for this oil are collected manually, one by one using the "milking" method, at the beginning of each campaign.  This pairing of Manzanilla Cáceres, the perfect variety, and manual harvesting at the ideal time, means that these Premium wines from El Lagar del Soto have perfect organoleptic and chemical characteristics. This, together with its limited production, makes El Lagar del Soto Premium DOP Gata-Hurdes a unique and unrepeatable oil that explodes with an incredible flavor on the palate.
