For decades, the Domokos plateau has been renowned for the cultivation of traditional varieties of tomatoes, intended for processing. We chose the Ilida variety, a relatively small variety with a strong tomato flavor, medium acidity and high in natural sugars. For this recipe, the tomato is simply grated. An artisanal manufacturing process that gives it a very interesting chew. The producer then adds capers of the "Lilliputia" variety (the smallest size on the market). To finish, he spiced up the recipe with "Agioreitikos" basil, a variety with a slightly peppery taste. You will love it!
