The recipe for Greek tomato sauce! For decades, the Domokos plateau has been renowned for the cultivation of traditional varieties of tomatoes, intended for processing. We chose the Ilida variety, a relatively small variety with a strong tomato flavor, medium acidity and high in natural sugars. For this recipe, the tomato is simply grated. An artisanal manufacturing process that gives it a very interesting chew. The final product is pasteurized at low temperature, so that the sauce is cooked inside the jar for a more intense taste. Fresh tomatoes picked when fully ripe, extra virgin olive oil, a pinch of salt... and nothing else! Ideal as a base for bruschetta or with delicious pasta.
