After leaving Lille where he grew up for Asia and determined to pursue his passion for cooking, Jérémie Plane set out in search of the perfect chef's knife. After extensive research leading him to the famous Kappabashi Street in Tokyo, he realized that the world of knives was divided into two worlds.
Two years and a million prototypes later, KOTAI was born: light, precise and sharp like a Japanese knife but stainless, durable and easy to maintain like a German knife.
Each knife is created by hand by our artisan cutlers, following an extremely precise and demanding process. Their know-how is passed down from generation to generation, combining technological advances with traditional craftsmanship.
