
SOFT CLAY AOP Clairette du Languedoc The clayey soils of Addisan support vines in a very dry microclimate which allows the harmonious concentration of the sugars of the grape berries. Grape variety and terroir: 100% Clairette in low yield (30h/h) in late harvest (mid-October) with slow fermentation, then cold blocking in a few hours and tangential filtration to separate the yeasts when only 40g remain sugar. The vines grow on clay-limestone soils facing south and evolve in a strict Mediterranean climate. Tasting: Brilliant yellow colour, nose of honey and cade, on the palate Mediterranean notes of honey, garrigue flower and pine forest. To be enjoyed with foie gras, blue cheese from the causses or Larzac goat cheese, or as a dessert with pastries. This wine should blossom further in the coming years. Recommended temperature, 6°C.
