Faced with the strong demand for our red miso, we have decided to put the young Miso Primeur from 2024 on sale. When to consume miso is a personal preference. Some people like the milder taste of rice koji that is present during the first 6 to 9 months of maturation. Others prefer the richer umami flavor that is present after 12 months to two or even three years. Try this miso young, and if you decide you want more umami, you can just store it in your cupboard for a few more months. Made from high quality natural ingredients that give a wonderful taste and are good for your health. All ingredients come from an organic farmer. Certified non-GMO soy. Naturally fermented in Japanese sugi barrels to develop the most complex and rich taste that can only be achieved through slow fermentation.
