Planted in Vietnam in the 17th century by the French, until the end of the 19th century, pepper was mainly grown in Phù Quôc, Hon Chông and Hà Tiên. It was at the beginning of the following century that it appeared in the south-east of Nam Bô, the province where the majority of the national pepper culture is concentrated today. White pepper consists of ripe berries stripped of their envelope (pericarp). The harvest is done manually, grain by grain, then the pepper is dried in the sun for several days.
