Take the best of the artichoke, the hearts and the cores, and give it some pep, acidity and freshness. A very creamy structure, a very "citrus" artichoke, lively, which combines the artichoke with Timut pepper (does not sting), and Combawa (lime originating from Reunion Island, of which only the zest is interesting) and its scent close to lemongrass.
