Hacienda De Chihuahua - Sotol Platinium - 38%: A Mezcal made from hand-picked Dasylirion plants in the Chihuahuan Desert, northern Mexico. Related to agaves, this plant is also called Sotol. The harvest is then sorted to ensure the highest levels of quality. Slow cooking in steam-heated ovens, fermentation with Champagne yeasts, triple distillation in a double copper column still. Before bottling, the distillate rests for at least 6 months in new French white oak barrels.
