These olives are hand-picked exclusively in the province of Imperia. They are then separated from the leaves and divided by size and then placed to mature in brine (a solution of water and salt checked carefully and periodically) for at least six months. After the seasoning period they are checked to verify their quality; they are selected by hand, keeping the most beautiful ones and discarding those aesthetically damaged and finally packaged in brine. What differentiates us is the quality of the olive, particular attention is paid to each step, without letting any detail escape us, for us the processing of olives in a traditional and artisanal way is essential.
