The San Marzano tomato is known and appreciated all over the world for its characteristics. The presence of a series of concomitant factors such as: the Mediterranean climate and the extremely fertile and well-structured soil, the ability and experience acquired by the farmers of the production area over the decades, has contributed to its success in the world , crowned, in 1996, by the recognition of the European Union as D.O.P. The intrinsic characteristics are: typically sweet and sour flavour, elongated shape of the berry with parallel longitudinal depressions, bright red colour, few seeds and placental fibres, bright red and easy to peel skin. These, together with the chemical-physical characteristics, make it unmistakable, both fresh and transformed. The tomato, as you know, is native to Central America. It arrived in Europe in the 1600s, initially only in Spain, where it was given a mere ornamental value. The food value of this crop was discovered only later, according to some not before the eighteenth century, when it was spread to various Mediterranean countries. According to some testimonies of the oral tradition it is said that the first tomato seed arrived in Italy around 1770, as a gift from the Kingdom of Peru to the Kingdom of Naples and that it would have been planted in the area that corresponds to the municipality of San Marzano. From this therefore derives the origin of this famous tomato, which over time, with various selection actions, has acquired the characteristics of the current ecotype. According to other testimonies, however, only in 1902 is there certain proof of the presence of the famous ecotype between Nocera, S. Marzano and Sarno. San Marzano took on great appreciation from a gastronomic point of view towards the beginning of the 1900s, when the first conservation industries arose, by Francesco Cirio, which produced the famous "pelato" for sauce.
