The Bernardo Selección Boneless Shoulder is a premium cured meat obtained from 100% Iberian pigs, raised in the wild and fed on acorns. Although it is of the highest quality, it is not Pata Negra, as the pigs did not meet all the Consortium's requirements. The meat is carefully deboned by hand, preserving quality and consistency. Weighing between 1.9 and 2.4 kg, it is ideal for restaurants, delicatessens and gourmet shops, ready to slice and serve. The 24-month curing process gives it an intense, aromatic flavour and a melting texture, typical of the best Iberian cured meats.
