
APPELLATION AOC Châteauneuf du Pape SITUATION Plots located in the northern part of the prestigious Châteauneuf-du-Pape appellation. VINEYARD AND TERROIR Old Grenache, Syrah and Mourvèdre vines planted on sandy soils, giving a finesse and elegance characteristic of this terroir. GRAPE VARIETIES Grenache noir, Syrah, Mourvèdre. ÉLABORATION 100% destemmed grapes. Maceration for 30 days with two racking operations at the start of fermentation, then two pumping overs per day. 50% of the vintage is aged in vats, and 50% in 450L barrels of 1 and 2 wines, for 12 months. TASTING Complex nose of plum, black cherry and a hint of cocoa and clove. Ample and balanced mouth, with extreme finesse and remarkable length. SERVICE AND PAIRING 17-18°C to allow all its complexity to express itself. Decant one hour before serving. Accompanies duck with green pepper, guinea fowl or pheasant.
