
Kidney beans are part of the traditional diet of many peoples around the world. They are an important source of vegetable protein and dietary fiber and have a high potassium content. RECIPE: Soak 250gr of beans the day before. Drain and cover with 3x their volume of cold water, cook over low heat for about 2 hours. Cut 1 onion, 2 tomatoes, 1 clove of garlic and brown them in a little olive oil. When the vegetables have simmered, add the red beans and their cooking water, cut vegetables, paprika and salt, and cook for another 1/2 hour. Sprinkle with chopped parsley.
