NEW HARVEST 23-24 Extra virgin olive oil from Jaén, early harvest harvested at the beginning of November.  It is the optimal time to harvest, to obtain a gourmet oil, since the fruit is in "veraison", that is, at its right point of ripeness.  Cold extraction, using mechanical processes that guarantee that the organoleptic properties of the oil remain intact.
