Dehydrated catering morels

The Morel is mischievous Already, it grows at the very beginning of spring, in a humid environment, often near watercourses. It is quite difficult to find because it often grows in tall grass. It should not be confused with its cousin, the Bohemian Verp (verpa Bohémica in Latin. )There are several qualities of morel on the market.  When you only have morel heads, this is the “special” quality.  It is an excellent product, very visual, with often calibrated morels.  You then have the extra morel, this is the morel head with the tail attached.  Here again these morels are calibrated to have a homogeneous visual appearance. For the morel that we offer you, it is “delicatessen” or “legs and pieces” quality.  Unsized morel heads mixed with morel tails. It is a product that is perfect for preparing morel, cream or port sauces.  During preparation, you can roughly chop the morels and the tails so that the scent diffuses even more intensely. When you rehydrate the morels, shake them well in the water so that the sand in the cells of the head falls to the bottom of the bowl. You can then prepare them with butter and a shallot. Flambé with cognac and then cream as in the recipe suggested below!!  A treat for the taste buds !!  Enjoy your food !
