This quintet of chocolates includes Trockenbeerenauslese and Eiswein chocolates. Something very special is the Trockenbeerenauslese Truffle. A Trockenbeerenauslese made from Silvaner grapes is used in the ganache. For a Trockenbeerenauslese, the grapes are left on the vine until they are dry and show noble rot (botrytis). They are then picked by hand to ensure the integrity of the grapes. However, they should have an angle of 150° in order to be used. This also makes them sweeter than ice wine grapes. Due to environmental influences, the yield may be low, depending on the vintage. This increases the exclusivity of the wine. These wines have a honey to deep golden color and flavor nuances of raisins, figs, caramel or honey. They are spicy, full-bodied and have an invigorating acidity. The discovery of the Trockenbeerenauslese took place by chance in 1775. The harvest of the grapes was announced at that time by the Prince Abbot of Fulda for the Johannisburg Castle. However, the messenger was late with the message and noble rot had already spread on the grapes. The grapes were still harvested and an excellent wine was made from them. The ice wine truffle is filled with a ganache made from Lemberger ice wine and exclusive chocolate. It is covered in milk chocolate and garnished with dark chocolate. Beginning of the 19th century The 20th century saw a rather poor wine vintage. The winegrowers left the grapes hanging on the vines if they were of poor quality. After the grapes had survived a few frosts during the winter, they were to be fed to livestock. But the winemakers noticed that these grapes produced a very sweet grape juice and began to press it. Nowadays, the grapes are only harvested when the temperature remains at a constant -7 °C. Depending on the weather, this can last until January. When temperatures are so low, the water separates from the fruit acid in a frozen state. As a result, most of the water remains in the grapes in the form of ice during pressing, resulting in only a small amount of highly concentrated juice being obtained for the production of ice wine. Now it is also clear why this premium wine is only produced in small quantities and is therefore so special. When making wine, the grapes have to be pressed under high pressure because of the ice. However, care must be taken to ensure that the stainless steel parts do not freeze. The young wine is vinified reductively. This means that an attempt is made to protect it as much as possible from oxidation. Such an aging process influences the maturation and aroma of the wine, as well as its color, smell and taste. To influence storage, airtight stainless steel tanks are used. However, this type of storage does not allow the wine to develop its full potential. It is therefore possible to store the wine in a less reductive manner by using wooden barrels, which are then refilled again and again to prevent oxidation from occurring. Ice wine is usually made from white grapes. Ice wines usually have a strong acidity, which provides a natural balance to the sweetness of the wine. In this case it is made from Lemberger grapes.
