This unique delicacy is made only with fresh and fine champagne. Two extravagant champagne fillings: pure champagne jelly and a delicious champagne ganache. Gourmet tip: Put the truffle in a glass of good champagne and let it melt on your tongue! The champagne truffle praline is unique and exclusive. In 2015, it won the silver “International Chocolate Award” in the category “Filled Pralines – White Chocolate”. The award-winning praline is handmade. It consists of two halves, one is a ganache with champagne in it, the other is a champagne-based jelly. These two different consistencies offer a unique taste experience that allows you to experience the full-bodied aroma of champagne. After the praline has been truffled, it is given a powdery sweet coating of champagne sugar. This can be a small hint of the tasty and noble interior of this praline. Enjoying the praline in a chilled glass of sparkling wine is an unforgettable experience. The production of champagne is subject to a number of regulations designed to protect the quality and the name. It may only be grown in the Champagne region of France, the planting direction is determined and the yield is limited to ensure consistent quality. Furthermore, mandatory hand-picking and immediate, gentle pressing are prescribed. In addition, there is bottle fermentation and a minimum storage time on the yeast. Only three grape varieties are used for production: Pinot Noir, Pinot Meunier and Chardonnay. Since Pinot Noir and Pinot Meunier are red grape varieties, the requirement for immediate and gentle pressing is understandable. The faster and more gently the grapes are pressed, the less red color gets into the base wine. This means that 160 kg of grapes produce about 102 litres of must. During pressing, two different musts are produced. The first, with approx. 82 liters, is the cuvée that is of higher quality. Because it contains a lot of acid, it produces livelier and fresher wines with a longer maturation period. The rest is pressed a second and third time, creating the Première and Deuxième Taille, which is intended for wines with a longer storage time. They contain more bitter substances due to the re-pressing. The base wine is produced through alcoholic fermentation. To ensure consistent quality and taste, producers have reserve wines in their repertoire that they can mix with the new wines. During bottle fermentation, sugar and yeast are added to promote the alcohol formation process. By breaking down the yeast, the champagne retains its aromas and thus makes it able to be stored for longer. The storage time during fermentation must be at least 15 months up to 3 years. The yeast must be removed before shipping. For this purpose, the bottles are placed on a shaking board, where they remain for 21 days, but are turned a little bit every day for 14 days to loosen the yeast. From the 15th Day they are easily raised upright. Once this process is finished, the yeast plug comes out of the bottle. To make this possible, the neck of the bottle is dipped into an ice bath so that the yeast freezes. When you open the bottles, the cork shoots out, but also a little liquid. This is filled up by the dosage, the composition of which is a secret of each manufacturer. The bottle is then sealed with its final cork. In a gift package with the appropriate wine, the excellent praline can serve as an excellent souvenir.
