White Chocolate – Blanche Fruit Rouge – A delicious blend of white chocolate, red fruits and versatile cocoa butter This exclusive Blanche Fruit Rouge chocolate contains red fruits such as raspberries, strawberries, cranberries and barberries. Furthermore, selected spices are added to enhance the taste. White chocolate is created because not all of the cocoa mass, i.e. the cocoa, is used. Its main ingredients are cocoa butter and sugar. Milk powder and vanilla are also added. Cocoa butter is extracted from cocoa beans. For this purpose, they are roasted, broken and separated from the shells. They are then ground into cocoa mass. The resulting mass is pressed to extract the cocoa butter. In this state it is liquid, but becomes solid when cooled. It is then refined to remove any impurities. The press residue is used to produce the press cake, which is then processed into cocoa powder. The finished cocoa butter has many uses; it is not only used in chocolate and nougat production, but also for couverture coatings. Furthermore, it is used in cosmetics for creams, ointments or soaps, as it leaves the skin feeling oily and soft, but does not make it too oily. In the kitchen, for example, it can be used to fry meat, as it melts quickly but can still be heated easily without burning. This also means that comparatively less fat is used, which has a positive effect on cholesterol levels. Some of them were freeze-dried using a corresponding process. This means that after harvest they are cleaned and then frozen. Once this has happened, the fruits are exposed to a vacuum, which causes the water they contain to immediately evaporate. This gentle process ensures that the nutrients remain in the fruit. Others, however, are dried. This is one of the oldest ways to preserve food. It was already known more than 5000 years ago. This practice was mainly known in the Middle East. Dates, grapes and figs were dried there. The technique was later used in Greece and Italy. Dried plums, apricots and peaches came to the Western world from China. For the process, the ripe fruits are dried in a dehydrator or oven. In some regions of the world, the fruits can also be dried outdoors because there is sufficient sunlight. The crucial thing is that it happens with a low heat input, so the water has enough time to slowly evaporate. If the temperature is too high, there will be a loss of taste and aroma. Above 40 degrees the vitamins are also destroyed. Therefore, a drying temperature between 0 and 70 degrees Celsius is ideal. Depending on the size and type of fruit, it is either dried in one piece or chopped beforehand to increase the surface area. By removing water, the microorganisms are deprived of their food source. The shelf life is also extended due to the increased sugar content. To round off the chocolate, spices are added. This exclusive chocolate goes perfectly with fruity white and rosé wines.
