Blanch Rose

White chocolate with 31% cocoa butter The queen of flowers – captured in white chocolate. A pleasure not only for the eyes and nose. Let roses speak differently! Harmonizes excellently with floral red and white wines such as Pinotage, Sémillon, Traminer or Muscat. Also grappa and vodka. The artisanal white chocolate – Blanche Rose chocolate is dedicated to the “Queen of Flowers”. The scent and aroma of the rose is incorporated into the chocolate using rose oil and dried rose petals. Consequently, the chocolate is individually poured by hand. White chocolate is created because not all of the cocoa mass, i.e. the cocoa, is used. Its main ingredients are cocoa butter and sugar. Milk powder and vanilla are also added. Cocoa butter is extracted from cocoa beans. For this purpose, they are roasted, broken and separated from the shells. They are then ground into cocoa mass. The resulting mass is pressed to extract the cocoa butter. In this state it is liquid, but becomes solid when cooled. It is then refined to remove any impurities. The press residue is used to produce the press cake, which is then processed into cocoa powder.    The extraction of rose oil has a very long tradition. Already in the time before Christ, rose oil was produced in Greece by extracting it from the flowers using sesame oil as a carrier material. It was used, among other things, to refine food or as a fragrance alternative for the body. The distillation of rose oil was already around 800 AD. BC carried out in Persia. However, the process did not reach Europe until around 200 years later. However, the variant with the oil extract was still used. In the 17th In the 18th century, roses were cultivated in Persia, India, North Africa and Turkey. However, in 18. In the 19th century, Europe and Bulgaria were added. To this day, one of the most important growing areas is the “Valley of Roses”. Two main types of roses are used: Rosa centifolia and Rosa damascena. They are characterized by their intense and heavy smell. The production quantity for one liter of finished rose oil is 4 tons of rose petals. These are picked by hand to guarantee their integrity. A liter of real rose oil can cost up to 17,000 euros. Chemical production now makes it possible to produce nature-identical oils, which are cheaper and come very close to the scent, but do not achieve it. URose oil is mainly used in perfume production or aromatherapy, but can also be used to flavor sugar, chocolate and liqueurs. An eye-catcher in the chocolate are the multi-colored dried rose petals. To produce the rose petals, they are spread out on a suitable surface and dried at a low temperature. Then chop it up to the appropriate size and mix it into this delicious chocolate. The chocolate harmonizes with floral white wines such as Sémillon, Traminer or Muscat. Also with a fruity red wine like a Pinotage.
