Macadamia Huimbi – The queen of nuts meets exclusive Tahitian vanilla in milk chocolate This excellent Macadamia Huimbi chocolate with 38% cocoa content encloses the queen of nuts. The macadamia nut is roasted slowly so that it can develop its full and distinctive aroma. The subsequent chopping gives the nuts a larger surface area and allows them to better transfer their aroma to the chocolate. Another exclusive ingredient is Tahitian vanilla with its delicious, floral aroma. After all the ingredients have been mixed, the chocolate is poured by hand. The macadamia nut originally comes from Queensland and South New Wales in Australia. In the meantime, however, other countries have also joined in cultivating this demanding plant. Examples of this include Hawaii, New Zealand and Brazil. Some varieties are now considered endangered in Australia. The actual nut is hidden in the seed shell. Cracking this is not easy because it is 2-5mm thick. To facilitate the cracking process, the seeds are dried for some time, which reduces their water content. Because the shell is so tough, the nuts are shelled before being sold. Due to the demanding cultivation, the complex processing and the correspondingly high demand for macadamia nuts, they are one of the most expensive nuts in the world. Because of this, it is nicknamed the “Queen of Nuts”. The exclusive Tahitian vanilla comes, as the name suggests, from Tahiti. It was probably brought to the island from the Philippines. The pods grow on lianas on trees. During the flowering period, these are pollinated by hand, as they only have a short flowering period of approx. If it is received within 24 hours, it is urgent. Otherwise the pods receive no further attention. Only when they have completely dried on the lianas are they removed from them and processed further. This method of cultivation does not produce a high yield, which is why the price of the finished product is considerable. Its taste is distinctive because it tastes less like vanilla than Bourbon vanilla, but more spicy. Its scent is also more floral and exotic, and not as strong of vanilla. Macadamia Huimbi – milk chocolate: A rare delicacy made from exquisite Arriba Nacional cocoa The Arriba Nacional cocoa variety is grown exclusively in Ecuador. It is one of the best cocoa varieties in the world. Since only a few plants have survived a plant disease, it is also one of the rarest cocoa varieties. To date, only a handful of pure cocoa trees remain. It comes from the areas surrounding various rivers, especially from the hinterland of the Wimbi (Huimbi) River. It is grown by the APROCANE cooperative in Esmeralda. This includes around 600 cocoa farming families. These are located in 22 municipalities. The majority of the inhabitants are descended from escaped slaves from Africa. Due to its aroma, this chocolate goes very well with fresh, sparkling white wines such as Pinot Blanc, but also with red wines.
