The little kick in this chocolate is the espresso beans, which are crushed and mixed in. The panels are then cast by hand. By crushing the beans, they gain a larger surface area, allowing more flavor to pass into the chocolate. This mixture not only provides an unusual pleasure experience, but also a kick. Coffee is known to contain caffeine, which acts as a stimulant. What is less well known is that chocolate also has this little extra. In the case of milk chocolate, the proportion was lower, but still present in combination with the espresso beans. One of the most popular and well-known drinks is coffee. The original home of coffee is in tropical Africa, Madagascar and the Mascarene Islands. Nowadays it is cultivated in the tropical and subtropical regions of the world. So it was in the 17th century. The coffee cherry, or coffee berry, can be found between the evergreen leaves. It is a stone fruit and the little flesh tastes fruity and sweet. The coffee seeds can then be found under several layers. These are better known under the name coffee beans. There are usually two beans in one berry. The main plants are Arabica and Robusta. But there are also 122 other known coffee plants whose beans produce excellent coffee. The shrubs need a climate that does not have too many temperature extremes, sunshine and heat. Which is why it was originally planted in mixed planting. However, this has resulted in a reduction in yield and therefore the larger plantations are now planted as pure monoculture. The harvest takes place once a year, but can last up to 12 weeks. This is because the berries on one bush reach ripeness at different times. In order to achieve a better quality of coffee, only the ripe fruits are picked by hand from a bush during the harvest. However, if a lower quality is to be accepted, the fruits are harvested by machine regardless of their degree of ripeness. Harvesting machines are also used on larger plots, as they save time and personnel. There are two options for further processing the fruit. Dry processing, in which the fruits are spread out and turned until they have gone down from almost 50% water to 12%. This can take between three and five weeks. Afterwards, the existing fruit skin and pulp are removed. During wet processing, the fruit is pre-cleaned with water and then the fruit skin and pulp are removed mechanically. They are then placed in a fermentation tank, where the mucilage surrounding the bean liquefies during fermentation. They are then washed and dried again. During cleaning, the parchment and silver skin are removed. This is followed by roasting, during which the colour, flavour and aroma substances are formed. It starts at 60°C and often ends at up to 250°C. The quality and variety of the green coffee, as well as the roasting time and degree of roasting influence the aroma, taste and digestibility. Heating the beans creates gases which swell the beans and cause them to break (first crack). This also makes it larger. The degree of roasting also determines the taste of the coffee.
