This 70% chocolate develops aromas of exotic fruit, vanilla, milk and honey. The Trinitario is one of the important basic varieties of cocoa. It originally comes from the island of Trinidad. Due to this minimal production quantity, the beans are in high demand and are therefore purchased by larger companies. Saint Domingue’s cocoa production can only cover about 1% of the world’s cocoa demand. The origin of pepper lies in India. A wide variety of pepper is grown and processed there. It is now also cultivated in Malaysia, Indonesia, Vietnam and Brazil. Pepper grows in the form of grapes on a 3-4 meter high climbing plant and can be harvested up to twice a year. Pepper is known in four different colors. This depends on when the pepper is harvested and how it is processed. Green pepper is harvested when unripe and then pickled in salt water as quickly as possible or quickly dried at high temperatures or freeze-dried. This preserves the green color. Black pepper is produced by harvesting it when it is green and then air-drying it. Red pepper is fully ripe harvested fruit, which is also pickled in brine to preserve its color. White pepper is the stone core of red pepper. For this purpose, the pulp is fermented, then peeled and dried in the sun or thereby bleached. The name Java pepper refers to the growing area of ​​the pepper, which gives it its name. The cinnamon blossom appears somewhat unusual. This is obtained from the developing fruit of the cinnamon tree and is very similar to a clove. The cinnamon blossom is harvested by hand because a cinnamon tree only ever produces very few blossoms. Its taste is mild, slightly floral and fruity-sweet. It lacks the intense and woody taste of the cinnamon stick.
