Organic olive oil Terre Ducru Matured Olives AOP Les Baux-de-Provence

The fruity “mature olives”, which were formerly called “black fruity” or “old-fashioned taste”, are a specialty of the Alpilles and are part of the AOP Baux-de-Provence. It is an oil extracted from olives fermented in a controlled environment to obtain characteristic aromas of candied olives or cocoa, and a very creamy oil. Origin: Mouriès, France Taste profile: a dominant note of black olive complemented by aromas of cocoa and dried fruits, and a slight ardor on the finish. Suggestions for pairing: always use raw in salads, to make mayonnaise or aioli and drizzled on fish, mushrooms and mashed potatoes. Also suitable for fried vegetables.
