Sencha Makinohara Organic is grown on the eponymous plateau, in the southeast of Shizuoka prefecture. This is a lowland tea, grown on a plateau with lots of sunshine. The leaves become thicker and darker more quickly than in the mountains, so they are steamed for longer. Of all the tea-producing regions in Japan, Shizuoka has the largest cultivated area and the largest production volume. Taking the Shinkansen bullet train, it is easy to see that this is an important tea growing region, the numerous plantations forming a magnificent green landscape. The Yabukita cultivar from which this tea comes comes from Shizuoka. It is the most widespread cultivar in Japan. Yabukita is derived from two Japanese words, Yabu (藪), meaning bamboo grove, and Kita (北), meaning north. It was first cultivated in 1908 by a tea farmer named Sugiyama Hikosaburo. Coming from a family of doctors, he chose another path and became a tea grower and breeder. He took two samples of tea from the fields of Shizuoka City and placed them in a test field. The field was close to a bamboo grove and the samples came from the north, which is why he named the new breed Yabukita. Sencha Makinohara Organic combines aromas of cut grass and seaweed, enhanced with a small iodized note. After a short infusion (1 min. 30) with just simmering water, it releases a beautiful pale yellow liquor. An everyday Japanese green tea with lingering vegetal flavors and umami.
