Malloreddus are known as Sardinian gnocchetti, they are the most typical pasta format of the Sardinian culinary tradition. Made with durum wheat semolina flour and water, they are delicious served with a rich, full-bodied sauce. The pasta is bronze drawn and dried according to the traditional method. One of the best known recipes is that of Malloreddus alla Campidanese. This is a typical example of Sardinian cuisine made with fresh sausage, tomato puree, extra virgin olive oil, basil leaves, garlic, onion, saffron and grated pecorino cheese and salt. Cooking is quite simple and involves boiling the Malloreddus in salted water and adding sauce and cheese after draining them and keeping them in the pan. Create a thick broth by adding sausage, tomato puree, garlic, salt and sugar and cook for 30 min. Put the basil and saffron dissolved in warm water and add them to the thick broth. Serve this dish with a glass of wine and savor the moment.
