Fregola, available in various sizes, was produced by "rolling" the semolina mixture into a large earthenware basin and toasted in the oven. In this case the Fregola is regular and comes in the form of balls with a diameter varying between 4 and 6 millimetres.       The perfect cooking is creaming with fish sauces or other full-bodied sauces. In Sardinia one of the typical dishes is Fregula Grossa Tostata with clams and clams.       This type of shape is the most used, especially in catering, due to its homogeneity in cooking and therefore ease of preparation.
