The Fregola, available in various sizes, was produced by "rolling" the semolina dough into a large earthenware basin and toasted in the oven. In this case the Fregola is regular and comes in the form of balls with a diameter varying between 2 and 4 millimetres. This type of shape is the most used, especially in catering, due to its homogeneity in cooking and therefore ease of preparation. Very elegant in presentation and already used by many great chefs!
