Apulian orecchiette with cuttlefish ink

Apulian orecchiette are the short Apulian pasta par excellence: about 3/4 of a thumb in size, thicker on the sides and thinner in the center. In this fanciful variant, the orecchiette are colored and flavored using only cuttlefish ink. Our Apulian pasta follows the ancient recipes of the regional tradition, characterized by craftsmanship and slow drying. Thanks to this process, we obtain a superior quality product that reproduces the excellent characteristics of fresh pasta: it does not overcook and retains sauces and condiments. The secret is the use of a few simple ingredients, rigorously from Puglia and Italy and a rustic and authentic taste, from the dough to the packaging.
