The fregola sarda in a toasted version which gives this slight nutty taste. Similar to large grains of semolina, fregola is rolled with your fingertips, dried and toasted in the oven. Fregola can be cooked in risotto, in salads and goes very well with fish. In case of a cold, it's the comforting dish: cook in chicken broth and add Parmesan cheese: children love it!
