
Tahitian vanilla is exceptional in every way. Produced in very limited quantities, it is generally the darling of great chefs. And for good reason ! These Tahitensis variety vanilla pods have their own characteristics. First of all, they are impressive: a humidity level of around 40%, extremely large, flexible and fleshy pods. But even more interesting, it is their aromatic profile which is atypical! While a Planifolia type bourbon vanilla pod (Madagascar vanilla for example) will have cocoa and fruity notes, and a strong emphasis on indulgence, Tahitian vanilla is more complex. Its low vanillin content (0.8 to 1% on average) allows other, much finer aromas to develop: magnificent aniseed, sweet and floral flavors then appear in the base notes. Do you want to buy French?
