Originally from Colombia, the Amazon pepper has the particularity of being harvested before it is fully ripe. This explains its yellow color, while most of its close cousins (like the cayenne pepper) are red! This early harvest aims to allow the Amazonian pepper to develop fruity and tangy notes. With a score around 50.000 on the Scoville scale (equivalent to 8/10), it is a pepper with character, which combines spiciness and aromatic qualities. The Amazonian pepper can be used whole, in a sauce for example, before being removed, or can be crushed and entirely incorporated into your preparations.
