
Casa Virzì's oil is a multivarietal obtained from Nocellara Etnea, Ogliarola Messina and Biancolilla olives from our historic "Bolo 1899" farm. This name comes from the union of the name of the district where the estates are located, the "Bolo" district, and from the year of construction of the family villa, which overlooks part of the company farms with an exciting view of Etna. The name Olio di casa Virzì refers to the same farmhouse where the history of our family originates and where the passage of time has been marked precisely in this House. In the composition of this blend you will always find the same three varieties, all coming from the historic olive grove of the Virzì family. It has a balanced sensory profile, fruity and with herbaceous notes typical of Sicilian perfumes. The Virzì oil stands out for its versatility, being able to be used to dress salads or most of the dishes of Mediterranean cuisine. Our first E.V.O. product, our classic. The olives are harvested green, with the use of manual mechanical facilitators, so as to be certain that they are rich in perfumes and nutritional properties. The transport to the mill takes place within a few hours in small ventilated boxes, the continuous cycle milling ends within 6 hours of collection. The oil is immediately filtered and stored in stainless steel silos at a controlled temperature and avoiding contact with oxygen.
