Our Canigou fir syrup is produced by a long maceration of the Abies alba fir cones in sugar, according to a traditional recipe of our Ancients. The harvest starts in summer when the ripened pine trees are full of sap and resin. They are harvested entirely by hand and macerated the same day. All our pine trees are harvested from the Canigou Massif, in the Natural Park of the Catalan Pyrenees. Fir syrup is used to decorate your pastries by adding a fruity and woody taste.
