The key to this harvest lies in the careful selection of cones: those with the highest sap and resin content. The main area is located at an altitude of 1,700 metres on fir trees that regularly reach a height of over 35 metres. These cones, once dried, macerate in organic sugar for several weeks in order to extract the resin and sap to make fir syrup. The cones are then ground into powder, which gives us this magnificent carmine-coloured spice developing fresh and resinous notes reminiscent of fir and certain citrus fruits, accompanied by more gourmet notes reminiscent of gingerbread. Directions for use: You can use this powder in your desserts and pastries, it will bring an original touch to your fruit tarts, especially citrus and wild berries.
