
Barley flour, a real treasure for compensating for mineral deficiencies, is distinguished by its soluble fibers which slow down the absorption of glucose. It is suitable for making pancakes, crepes, breads and many other delicacies, while offering, through its low glycemic index, valuable help in regulating weight gracefully. Our French flours are freshly ground on an Astrié mill, a mill which allows us to obtain the best quality flour, as efficiently as possible. With an extraction rate of at least 80% in a single pass, the flour is neither heated nor oxidized. This effectively produces flour of exceptional nutritional finesse, a true reflection of our wheat or cereals.
