This whole rye flour from biodynamic agriculture is rich in fiber, which gives it an important role in intestinal transit. It also helps maintain stable blood sugar levels, and it is a good source of magnesium. Our French flours are freshly ground on an Astrié mill, a mill which allows us to obtain the best quality flour, as efficiently as possible. With an extraction rate of at least 80% in a single pass, the flour is neither heated nor oxidized.
