The base is made up of aromatic Florina peppers and hot bell peppers, which are traditionally smoked over beechwood and then filleted. Refined with local herbs such as basil, thyme and wild garlic as well as with sweet and spicy ingredients such as quince, grape must and a hint of honey, the result is a chutney that can hardly be put into words: fruity, piquant, slightly sweet and intensely spicy.
